
The mauritian coutia is traditionally made with raw mangoes but in this recipe we will use easily accessible green apples as a substitute. My hubby, my mom and myself, we prefer the apple version which has a softer and sweeter taste while still retaining a fresh tangy taste.
Ingredients
3 green apples
2 tbsp whole mustard seeds
1 tbsp tumeric powder
3 garlic cloves
chili
salt
oil
Method
- Ina pestle and mortar or a grinder, crush garlic, mustard seeds, chili.
- Grate apples and gently press the apple in the palm of your hands to extract excess juice.
- Gradually add the mustard paste, add salt and oil to taste.

This chutney goes well with anything from a meat curry with rice to ham with bread! The coutia can be conveniently stored in clean jars for a couple of weeks in the fridge.
