“Gateau Arouille” (Taro snack) is the creole name for a delicious popular snack in Mauritius. It is very crunchy on the outside but moist on the inside and overflowing with flavor. My grandma used to cook this every time I went back home, and this was always the taste that made me think of home. My grandma passed away a few years ago, but she taught me how to make this the last time I saw her. Here’s her ’secret recipe’ all the way from Mauritius!
Ingredients
- 1kg Taro grated
- 1 teaspoon chopped ginger
- 1 tablespoon bean paste
- 6 cloves garlic chopped
- 2 tablespoon fish sauce
- 4 tablespoon sugar
- little water
- 300g tapioca flour (can be substituted with corn flour such as maizena)
- Pinch of salt
- Oil for deep frying
Method

Grate the taro using a grater with large holes, use gloves to prevent itchiness.
Finely chop garlic and ginger together with a pinch of salt. The salt will prevent the garlic and ginger from: jumping” while chopping.
Add all ingredients except water to the grated taro. Mix lightly with your hands.
The mixture should be a bit sticky. If it’s too dry (the flour isn’t wet), add some water a few drops at a time. Mix until well combined. Don’t over mix else the “gateau arouille” will be too dense.

Use a tablespoon. Take a scoop and shape it into a ball using your palm. It should be around 2-3 cms in diameter.
Deep fry in hot oil until they are golden.

Serve hot with chili!

Bought Taro, got ginger, garlic and the other stuff. Someone told me to add some black bean to the mixture? Will give that a go on the week end!!. ZOLIIIIIIIII
Thanks Mike, it’s not black bean it’s the normal bean sauce paste that comes in a jar. It’s brown. All the best with your gateau arouille!

thought might give this a go but could you please give me a bit more info on the bean sauce, anything else apart from being brown, the name or anything else. Hopefully I’ll be able to get here in Australia.
