This is my kids’ favourite savoury muffins – yummy, healthy and balanced with eggs,yogurt, cheese, olive oil and ham. Moreover they are fast and easy to make, what could a mom want more!

Ingredients for 6 muffins:
100 g self-raising flour
1 tsp baking powder
2 eggs
1 small pot of plain yogurt
3 tbsp extra virgin olive oil
100g sliced ham
100g grated cheese
salt & pepper to taste
Method
- Preheat oven at 180 degrees, you can skip this if you use the small grill oven
- Whisk the eggs in a large/medium bowl
- Slowly add in all ingredients :flour, baking powder, yogurt, ham and cheese
- Fill muffin pan (oil the pan for regular muffin pan, no need to oil if you’re using a silicone pan) and bake for 20 mins until slightly golden.

It was so delicious that my kids didn’t give me time to take a proper picture of the muffins!
